Spring Asparagus Recipe & Tips

Here’s a recipe to put you in the mood for spring. Fresh Cream of Asparagus Soup. Click here for the recipe. Thin asparagus spears will be a bit tenderer and will cook more quickly than thicker spears. You may need to add another 2-3 minutes cooking time for thicker spears but they will taste just as good as thin spears when cooked in a soup. When buying fresh asparagus, look for tightly closed buds on the tips. The spear should not flop over when held straight up and down from the stem end. Serve this soup with some crusty bread and a salad for a terrific springtime meal.
